
If there’s one thing I love, it’s a meal that feels special but doesn’t take hours to make.
Welcome to Dinner for Four — a new little series I’m starting to share weeknight meals that are high in protein, easy to make, and actually worth sitting down for.
This first one is a good one — we’re going Greek tonight 🇬🇷 with chicken souvlaki, creamy tzatziki, crispy oven fries, and the coziest Greek yogurt flatbread you’ll ever make.
It’s fresh, flavorful, and has that “summer by the sea” vibe — even if you’re eating it in sweatpants on a chilly evening.

🧾 Ingredients (Serves 4)
Chicken Souvlaki
- 2 large chicken breasts (about 1 lb / 450 g), cubed
- 1 cup Greek yogurt
- 2 tbsp olive oil
- 1 tbsp lemon juice
- 3 cloves garlic, minced
- 1 tsp dried oregano
- 1 tsp paprika
- Salt and pepper to taste
Oven Fries
- 3 medium potatoes, cut into fries
- 1 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp oregano
- Salt to taste
Greek Yogurt Flatbread
- 1 cup Greek yogurt
- 1 cup all-purpose flour (plus more for dusting)
- 1 tsp baking powder
- ½ tsp salt
- Olive oil for cooking
Tzatziki
- ½ cup Greek yogurt
- ¼ cucumber, grated and squeezed dry
- 1 clove garlic, minced
- 1 tsp lemon juice
- 1 tsp olive oil
- Salt and pepper to taste
Extras
A sprinkle of oregano or chili flakes
Sliced onions & tomatoes
👩🏽🍳 Instructions
1️⃣ Marinate the Chicken
In a bowl, whisk together Greek yogurt, olive oil, lemon juice, garlic, oregano, paprika, salt, and pepper.
Add the chicken and coat evenly. Let it sit for at least 30 minutes (overnight is even better).
This marinade makes the chicken so juicy and flavorful — don’t skip it.
2️⃣ Make the Fries
Toss your potatoes with olive oil, garlic powder, oregano, and salt.
Bake at 425°F (220°C) for 25–30 minutes, flipping halfway, until golden and crispy.
The trick: don’t overcrowd your tray — they need space to crisp!
3️⃣ Cook the Chicken
Thread the marinated chicken onto skewers (optional) or cook directly on a hot grill pan or skillet.
4–5 minutes per side should do it — you’re looking for a golden sear and tender insides.
4️⃣ Mix the Tzatziki
In a small bowl, combine Greek yogurt, cucumber, garlic, lemon juice, olive oil, salt, and pepper.
Chill it while everything else cooks. It’s creamy, cool, and the best sidekick to spicy, grilled chicken.
5️⃣ Make the Flatbread
In a bowl, mix flour, baking powder, and salt.
Add Greek yogurt and combine until a soft dough forms.
Knead lightly, divide into 4 balls, roll out, and cook each on a hot oiled skillet for 1–2 minutes per side.
They puff up slightly and turn golden — soft and chewy perfection.
6️⃣ Assemble and Enjoy
Lay out your warm flatbread, top with chicken souvlaki, a spoon of tzatziki, a few fries on the side, and those onions and tomatoes for crunch.
It’s the kind of meal that makes everyone go quiet for a minute — the good kind of quiet.
